Directions
  
1. Preheat & prep:  
   - Heat oven to 325 °F (162 °C).

2. Combine glaze:  
   - In a medium bowl, whisk together 3 Tbsp maple syrup, 1 Tbsp coconut sugar, ½ tsp vanilla extract, and a pinch of sea salt until smooth.
3. Coat the nuts:  
   - Add ⅔ cup pistachios to the bowl.
